• Fish Ballotine with yuzu gel, orange miso dressing, fresh orange

• Hand cut beef tartare served with croutons

• Compressed Tuna served with a soy & ponzu dressing (chilli), petite salade

• Grilled octopus with chipotle glaze, burnt red pepper coulis, deep fried capers, petite rocket salad

Main (choice of)

• 200 gr Kilcoy pasture fed eye fillet, fries, salade, Cafe de Paris butter, red wine jus

• Confit fish beurre noisette, leek fondu, mussel, beurre blanc and dill oil

• Prawn pasta with a bisque sauce, confit cherry tomato, herbs

• Tea brined duck breast, braised red cabbage, pomme fondant & carrot puree

• Pavlova with red fruits
